I made a post for this banana bread when we first started the blog almost 2 years ago. And, why did I re-post today, besides fixing the horrible pictures? Because I was up early this weekend and was craving banana bread! I actually woke up early (for me) this past Saturday morning and let Corey sleep in. Corey is usually up at 6 or 7 am with the baby and sometimes our 3 year old as well. Corey is a trooper. Even though neither of us sleep that well at night (because our 1 year old doesn’t sleep so well yet either), Corey always gets up and lets me sleep or try to sleep for an extra thirty minutes or so. Oh how I love him!
And, side bar, anyone who tells you their baby sleeps through the night has either:
a) a big house in which they do not hear them cry
b) have been tortured by their baby “crying it out” to sleep
c) slept their baby in a separate room since birth.
Congratulations to the parents (and babies) sleeping through the night, but I think you’re probably the minority, or at least I like to comfort myself with that thought. I, on the other hand, just had to have my teeny, tiny babies next to me, and so we are all still working on learning how to sleep. Based on how we raise our children, some would probably even give us the “hippy attachment parents” of the year award. But, honestly, we choose our battles, and I wouldn’t have traded mine.
Well, back to banana bread.
This recipe, as you will see, is a very quick and easy one. And once you taste how delicious this healthy, low carb version of banana bread is, I guarantee you will love it. It tastes like a piece of banana bread you’d get at a bakery. Next time, I am definitely making two loaves because it is holds well on the counter for 3-4 days and refrigerated for almost 2 weeks.
