This Grain Free Coconut Chocolate Banana Bread is a quick coffee-cake like sweet bread that bakes up perfectly moist with tender coconut, sweet browned banana and dark chocolate chips. Corey’s sister and brother-in-law were coming over for brunch with their cute, boisterous new pup, Shadow. Adeline absolutely loves playing with Shadow and Nala; giving them commands is her favorite, and the occasional treat for reward. I wanted to make something sweet, and coffee cake-like to go with our Caramelized Onion and Mushroom Frittata. We are lovers of dark chocolate, if you haven’t already figured that out, so I threw in some Enjoy Life 69% dark chocolate chips, which is as close to 70% dark in a chip you can find at the store.
This is a great grain free recipe, and honestly, I don’t think anyone could tell. Everyone had at least two slices with warm, pastured butter. So delicious….
