It’s National Pie Day!!! Who doesn’t love pie!?! I guess some people don’t love pie, but no one I know. If pie is light, fluffy and creamy with a whipped topping I tend to love it even more. A few of my favorites are chocolate mouse pie, lemon meringue and pumpkin chiffon pie, any cream pie really…can you see the correlation? This recipe for Paleo and no sugar added Coconut Cream Pie is light and buttery, with a hint of chocolate in the toasty pecan crust. It is delicious!
Even though it takes a bit of time and a little extra effort (at least from most recipes I’m use to making with two small kids) it is totally worth it! This pie is a beautiful treat for a fancy dinner party but also for a little personal splurge as it keeps well in the fridge for almost a week, so you can enjoy it piece by piece.
As I write this post, I can’t wait to have a slice with a cup of tea. It’s been a long, challenging week launching Better Baking on Kickstarter and of course, when it rains it pours…both kids came down with a cold. It’s real life and sometimes it a rough road. But for me, lately, I’m trying to stay focused, keep positive and maintain faith. Enjoy the little things as often as I can, like the laughter in between and a slice of pie with a cup of tea.
