So I know Sugar Cookies can be pretty boring. But, I was baking sugar cookies all the time to make sure the taste of ZenSweet was just right. I’ve compared a lot of other sweeteners in this sugar cookie test and ZenSweet really holds up with no aftertaste. Today, I’m writing about this sugar cookie recipe in particular because it is seriously the quickest, easiest recipe I’ve ever seen. 1/2 cup butter (or non-dairy butter, like Earthbalance)
1/2 cup ZenSweet
2 Tablespoons milk (or as we like to use unsweetened almond milk)
2 teaspoons vanilla extract
1 cup all-purpose (or gluten free flour)
1 1/2 teaspoons baking powder
1 pinch of sea salt
Preheat your oven to 350 °F. Melt butter in microwave or in a small saucepan. Add ZenSweet and mix until combined. Add vanilla extract and milk and stir. Add flour, baking powder, sea salt and mix well. Form into 12 equal sized balls and flatten to about a 1/2 inch thickness. Bake for 8-10 minutes.
Here are some ways to Vamp Up this Sugar Cookie Recipe…
Add 1/2 cup of crushed almonds, walnuts, or pecans to finished dough
Add 1/2 cup of dried cherries, cranberries, blueberries, or raisins to finished dough
Add 1-2 Tablespoons lemon, lime, or orange zest to mixture
After rolling and flattening dough on baking sheet, put a small well in each cookie and add hazelnut spread, raspberry, strawberry or apricot jam
Top flattened cookies with a spoonful of this mixture: 1 egg white, 1 cup of shredded unsweetened coconut, and 1/8 cup of ZenSweet
