In the ZenSweet house we love to have full-fat Greek yogurt in the morning. It’s a quick and easy breakfast to grab on the go. But yogurt tastes so much better with a little granola stirred in. This Grain Free Granola is a more nutrient rich version of old-fashioned “oat” granola. It is so delicious and similar in taste to the old stand-by that most people would never know it is grain free and low carb. This recipe also contains very little sugar compared to traditional granola. It has a bit of honey, but for a completely sugar free version, simply replace the 1/4 cup of honey with another 1/2 cup of ZenSweet and omit the raisins.

This recipe takes a little extra time with soaking and dehydrating the nuts and seeds twice. If you’d like, you can skip the soaking and dehydrating portion of this recipe, but, it is so worth the time to have the extra nutrient value of bringing your food to life through soaking/sprouting and dehydrating at a low enough temperature to retain the precious nutrients in the nuts/seeds.
