So, if you read The ZenSweet Life once and a while or every week (Yay!), you’ve probably noticed there are a lot of chocolate recipes, and when I say a lot, I mean A LOT! Trying to diverge from the usual- I created these Paleo, Sugar-Free Lively Lemon Bars.
But why you ask? I love chocolate, Corey loves chocolate and if we ask the kids vanilla or chocolate, it’s always chocolate (with a please if we’re lucky)! I guess we’re just Team Chocolate. I think most people at least like chocolate if not love it. But, there are a few, like my mother-in-law, that really prefer other flavors for sweets like lemon, berry, and even vanilla. I always thought of vanilla as so boring and plain, but since starting a food blog, I’ve really tried to embrace all flavors. Food is an interesting thing, like art, both are dependent on your perception and preferences.
I actually met a local small business owner and fellow ‘mom-preneur’ who can’t have chocolate. When I found out, I cried, Can’t have Chocolate, WHAT!?! Well, it turns out she has a slightly irregular heart beat (nothing serious or a worry) but if she eats chocolate, it gives her heart palpitations. It’s just so bothersome that’s it not even worth her eating any chocolate, not even a nibble. So, long story short, I’ve really started thinking more about non-chocolate recipes.
With Spring fully Sprung, fresh flavors like lemon seem to be on our minds. The other day at dinner, Corey was squeezing like half of a lemon on his fish commenting on how great it tasted. With everyone (even the kids) enjoying the fresh, organic lemons we had bought, I decided to bake up a sugar free, Paleo, Low carb version of the classic lemon bar.
