It has finally started getting warmer in the Midwest and we actually had an 80 degree day. Yay! Summer is on the way which means our garden veggies will be taking off in no time. I’ll post some pictures of our garden soon. We worked hard today digging in new mulch, planning and planting, and definitely earned dessert. But, in the ZenSweet house we keep our desserts sugar-less. Since it was so warm out we decided to make a no-bake treat. When these Snickers Cheesecake Bars are frozen they make a delicious, light, creamy, cool alternative to ice cream. It’s a great recipe to make ahead for a party or potluck, and kid’s of all ages love it!
This recipe may seem a bit high maintenance, but with a good food processor it really isn’t too time consuming to create. The recipe also makes at least 10 very generous servings, so it goes a long way. You will be happy once you taste these creamy, cool, caramel kissed Snickers Cheesecake Bars that are also healthy with very few carbs and sugar.
