This recipe for Raspberry Sorbet was created on a whim to go with our Flourless Chocolate Cupcakes (coming soon). I made these cupcakes and Raspberry Sorbet at the last minute for a birthday. And when I say last minute, I mean, literally the last minute as the party was going on.
With a busy family, work life, and a new baby, it’s not always easy or even feasible to find the time to create nice treats for the ones you love. I feel like everyone’s lives are getting busier and fuller these days. This is not a bad thing as long as we love the journey we choose. As busy as days can be, I like to take time each day to reflect (even if it is for 30 seconds) on how much I love my kids, my husband, my dog, my house, and the food I am lucky to have. It may seem overstated these days to do “gratitude” work, I know many energy healers, health experts and the like have talked about it forever. I don’t have so much time to meditate these days, but simply focusing it back inward and doing a quick gratitude reflection has really helped me stay grounded and happier overall.
I know this recipe seems almost too simple, but that’s the beauty of it. The kids seriously loved this sorbet…I think they thought it was ice cream. And it paired so well with dark chocolate cake. This is a pretty sweet sorbet, but I’m sure you’ll love the simplicity and clean taste. While you run the blender for the minute or two…take a few deep breaths, and think about what you are grateful for and I bet the sorbet will taste even better!
